Are sunchokes/jerusalem artichokes safe to eat raw?

YES, they are wonderful, and I eat them when they are in season. I just dug a whole bunch out of my back yard.

Years ago, I went with David Wolfe to Peoples in San Diego and introduced him to Sunchokes, he had never had them before.. We ate sunchokes in the car and chatted.. He had taken me to pick sun dried olives off a tree.. This was way before he got popluar.
