how to melt raw cacao butter?

And is it still raw once melted?

I think Funky Rob's site or Shazzie's site has ideas on that, but I've never done it.

I'm thinking of buying the cacao butter, out of pure curiousity. I wonder what raw truffles taste like?

Slowly but surely though, I am moving away from eating too much cacao. Probably because I have never seen it being grown, manufactured, and foreign stuff like that makes me a bit suspicious. bla bla... where did THAT rant come from? hehe

Anyway, who knows. Maybe this cacao butter is da bomb and I will eat it out of the tub with a spoon until my dying days (which probably won't be too far off if I start doing that, haha)

maybe melting it au bain marie is a good way? you'd have to keep track of the temperature though, but it could work.

I grate the cacao butter and place it in a dish. I then take a slightly larger dish and put some hot water in it. Then I place the bowl of cacao in this bowl.

As long as the temp is not going above about 40 deg C then yes, it's still raw - cacao butter melts at 35 deg C (90F).
