Raw foods chef

Is anyone here a raw foods chef? How can I get into the field?

I am considering this as a career because I just think preparing really delicious raw creations is so fun, and a great creative outlet for me. Before I went raw I was already into cooking.

Sometimes I feel conflicted about it, since I stick to eating just fruits and some veggies, and think gourmet raw goodies should be eaten sparingly.

yeah, i too have kind of wondered about that
i mean , the dichotomy

the less fancy stuff
don't need to get all "chef" like about

salads, a fruit

Mmm.. I have the book Raw Co authored by Roxanne Klein and the dishes in it are pieces of art. They are truely stunning but I wouldn't make them for a few reasons,
1) All of them contain rare items.
2) They require meticulous preperation.
3) They are raw but I personaly feel that all the nuts, salts and spices used are not optimal for my health.

I admire the artistry of it though !

I feel that in preparing beautiful organic raw foods for others you are giving a gift. It might not be what you choose to eat. But what an improvement for the general population that might delight in your creations. I am starting a personal cheffing business and am currently making loads of organic homemade medicinal soups and stews for others. Even though I aspire to be raw, I feel that my soups are a huge improvement for the average person, and in this I am giving a gift. Is it possible for you to look at it the same way? You have to find your own truth. But that is my two bits.

I'm all for more raw chefs! Because I am a crappy cook, uncook or whatever you want to call it. And sometimes I would like something more imaginative than a bell pepper and 6 kiwis for dinner. I went to Pure Food & Wine in NYC recently and was astonished at how delicious all the food was. Not for everyday, it does have considerable fat - but for an occasional treat, definitely. Sometimes I really want something more complex and just don't know how to put it all together.

Well the whole chi or passion that goes into preparing the food as well as the visual and flavour appreciation while eating it probably counts for alot !

Certainly for a special occasion it would be enjoyable smiling smiley
