Date: December 25, 2007 12:04AM I know some friendly bacteria are heat resistant, so my question is at what temp do probiotic enzymes in Milk begin to be destroyed > Myspace: [www.myspace.com] > Blog: [chefdemocha.blogspot.com] Re: Probiotic Q?

Date: December 25, 2007 03:59AM I assume you are ultimately concerned with the growth rates of the friendly bacteria. Lactobacillus does best at 37-43C and growth is reduced linearly at 55-70C depending on the strain. I'd take 70C as a near total death point.
I imagine it would be similar for other bacteria. Here's a temperature converter. [www.wbuf.noaa.gov] Sorry, only registered users may post in this forum.
