olives fermented or raw ?

I really like whole olives, the Tassos brand seams to take
their love of olives seriously. they even invite usda
inspectors to their protected olive farms/national park
so they can sell "certified organic" olive oil to us
in the usa but the whole olives are not certified
organic and are fermented too i think.
they contain an organic (in the chemical sense,
not the new category of food sense) form of tylenol
or ibuprofin or something. that helps with muscle
aches or head aches or soarness .
this chemical is also present in the oil pressed from
the olives.
I also really like the tast of whole olives,
the ones that are not destroyed by packing
them in too much vinegar and salt.
OK OK OK the forum question is "are they raw?" "can I get them raw?"
"does any one know some other good olives I could try?"

To my experience, you cannot find edible olives fresh off the tree.

I consider them raw even if they are fermented. If they are in jar, they are not raw, as the canning process requires heat. Some olives are sun dried and don't have the salt/brine/vinegar taste. I try to avoid pitted olives since they soak up too much brine for my taste.

Olives are only "natural" if they are sun dried. Otherwise they are not ripe and some form of process (often with salt) is used to make them edible.

what about olive oil in a glass jar? do you think it is pasturized even if it is cold pressed in the triditional way or would they just pasturize it anyway?

I don't use olive oil because it's made from unripe olives.

If it's cold pressed, I don't think it will be pasturised.

so you know about the olives too.:-)
have you ever noticed that they make you feel better.
like a pain killer affect?
I like them after a long bike ride, when my arms are soar.
the affect is almost instant, and there is no comeing down
like as if it was a drug. it just makes you feel better,
you can get the same feeling from wheat grass, sort of.
like you are doing something good for your self.
Ive found that the best ones are cured with a brine
not too salty to change the taste, but to add taste.
and a little very good red wine vinegar.

I don't know if that is concidered raw but it is vegan
and organic.
