hot water treatment for mangoes

sorry if this has been posted before. I have just discovered that mangoes are dipped in water of temperatures about 50 to 55C for up to an hour.
Is this common knowledge?
does it affect the fruits raw ness? (can't think how hot that is - bad brain day!)

A quick look on the internet shows that this happens to many fruits - lychees, cherries, pineapples, peppers

I found the temp conversion formula at:

[en.wikipedia.org]

and by my math that calculates to:

50 C = 122 F

55 C = 131 F

Enzymes in food are said to die above 115 F

Its not great, but I've noticed that mangoes that get this treatment nowadays are much better at ripening that in the past. I think perhaps they were using higher temperatures in the past. It used to be that a layer of flesh didn't ripen near the skin, and there were be large brown spots in the mango flesh. But nowadays I don't see the brown spots and that layer of unripened stuff is gone.

If the mangoes ripen without rotting, I think you've got a good batch, and there's still some life force left, even with that nonsense.

There's a thread somewhere about totally artificial means of ripening mangoes with dangerous chemicals, so I'd still prefer the water over that. =\

I'd REALLY prefer a mango tree... that can somehow grow mangoes in an apartment in Canada...

if i get mangoes at the store
and they are green
i just put them outside in the backyard

on the grass
and let the sun work on it

and they ripen that way and taste fantastic afterward

no reason for them to do that

at all

killing our food

i better stop crying
and start planting
