Date: March 25, 2008 06:45PM Raw sprouts are awesome... unless they're toxic in a raw state (like certain beans). Then you need to cook them. Sproutpeople.com will tell you about some of them.
There are certain foods, like tomatoes, in which light cooking releases certain nutrients that the body cannot use raw. I read an interesting argument presented about this, however, that said basically the gains vs. the losses are unnecessary on a raw diet. I do not know if this is the case for sprouts. The body does expend extra energy to digest cooked food, but if you're eating a mostly raw diet with a little bit of cooked sprouts... ask your body how it feels, and go from there. =) Raw sprouts are a love affair of mine, that's for sure. <3 [www.nutritiondata.com] ^This is a fascinating chart about typical nutrient losses resulting from cooking.
