my 5 year old daughter loves zucchini and/or cucumber noodles tossed with lemon juice, dill, olive oil, and pine nuts... and so do i! i also make cucumber noodle saimin (noodle soup), use it to make shreds of carrots, daikon, jicama, beets, green papaya for salads or nori rolls, the list goes on...
