Why do chia seeds have to be taken with fluids?

My guess would be that it's because they are a hydrophilic seed. They love moisture and gel it up. I think if they weren't soaked a little they would probably absorb water from you and be dehydrating.

I love them and throw them in my smoothies. Sometimes I put about 1/3 of a cup in a mason jar with 3 cups if distilled H2O and let them gel in the fridge. I eat the out of the jar or use the that way in smoothies. The soaking is supposed to make the nutrients more available.
