Mushroom, MUSHROOM

Here's another example of raw totally blowing my mind last night:

I HAD SHIITAKE MUSHROOM IN A TOMATO DISH LAST NIGHT AND LOVED IT!!! WTF?!?!?!?!?

I *hate* the taste of mushrooms. Utter loathing and disgust! FUNGUS! EWW!! BLEUGH!!

But, I had some (chopped) in a tomato creation, and... wow. It wasn't prepared by me, though.

So my question is, how do I go about selecting and preparing these guys? I'm almost afraid to experiment, because mushrooms always used to make me gag... (but now the texture is lovely!). I want to experiment without having "too much of a good thing" and being back at square one.

Mushroom suggestions? Ideas? Information? Trivia?

Also, is eating mushrooms hygienic? O.o
