bean sprouting

I was wondering about sprouting beans. I was told that beans are not digestible if uncooked. And toxic in some cases ( kidney beans ) But, if you are sprouting does that eliminate these problems? Can you soak kidney beans, chickpeas, then sprout them safely? Im pretty un educated when it comes to sprouting beans thanks! Re: bean sprouting

I've eaten sprouted beans, and haven't had digestion problems with them; I just don't like the taste of many. Those mentioned by Brian, above, are good, but be aware that they don't taste like their cooked unsprouted form. Sprouted raw mung beans with raw coconut meat and water pureed together, raw ginger and galangal, lime juice, red chile, agave, and shredded cabbage, onion, and carrots makes a great quick nourishing Thai salad. I also like raw hummous, made with homogenized sprouted garbanzos and raw tahini, lemon juice, garlic, sea salt, and lots of naturally dehydrated cumin--yum!. I eat a lot of Arabic food, and this would be a hard one to give up! There are some good books on sprouting[Jeremy A. Safron, Kathleen O'Bannon] or go to the recipes boards here. Good luck! Date: January 02, 2009 06:25AM Willows, most beans are good to soak and sprout, with the exception of kidney beans. These are toxic raw (and for that reason I'd say they shouldn't be a food for us full stop). Re: bean sprouting
