Date: May 29, 2009 06:39PM Interesting that the nutrient loss through drying is twice as high as through cooking on many vitamins.
What happens when the nutrient is 'lost'? Is it washed out and disappears entirely or is it transformed/denatured? I would assume the former in the case of vitamins and the latter in the case of aminoacids, for example. Anyone know? Sorry, only registered users may post in this forum.
