what is black miso?

Date: October 03, 2009 06:39PM In Julianno's book he asks for black miso in some of his recipe's. I've found red, white, and brown. Does anyone know what he is referring to? Instead of a health food store do I need to go to a Japanese grocer? Re: what is black miso?

Hi urieldana, if you have access to a Japanese grocer, great! You might look for "Kuromiso". "The taste, aroma, texture, and appearance of any specific miso vary by miso type as well as the region and season for which the miso was made. The ingredients used, temperature and duration of fermentation, salt content, variety of kôji, and fermenting vessel all contribute. The most common flavor categories of soy miso are: Shiromiso, "white miso" Akamiso, "red miso" Kuromiso, "black miso" Hatchomiso [en.wikipedia.org] Sorry, only registered users may post in this forum.
