Nutrients absorption

Hello!

I am hardly a big believer in food combining theories. I wanted to know if anyone knows if iron and vitamin c need to be consumed close together inorder for iron to be absorbed or just the fact that I eat enough vitamin c during the day will be enough.

It is my understanding that a Vit C-rich food should be digested at the same time as an iron-rich one for chelation and proper assimilation of iron to occur. This is why in traditional cuisines, kale, chard, and spinach typically are served with lemon juice sprinkled over them : )

Few fruits and vegetables are even lacking in vitamin C. You dont eat your leafy greens by themselves anyway do you? I wouldn't worry much about it.
