chikpeas have turned gray

I have soaked chickpeas in water for a bout a day and a half, thus sprouting them, then i dried them a bit and put them in the fridge. some of them turned gray, though thier texture and taste were usual. Date: February 10, 2010 02:23AM Eric, Gray is molding and getting rancid.
I use filtered water to sprout. After rinsing well, I soak them overnight and then rinse twice a day, leaving the chick peas at room temperature. If the room is too warm, the chick peas will mold and will need to be thrown away. The chick peas are ready when they have a small tail. If the tails get too long, they start to turn to mush, too.
