The mighty cucumber! Wow, who knew?

1. Cucumbers contain most of the vitamins you need every day, just one cucumber contains Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc.

I used to make this fabulous Greek dip with cuke called tzaziki. The secret to a really intense cuke flavor is to grate it and put it in a coffee filter for about an hour or to let a lot of the water drain out. Add garlic, salt, pepper, olive oil, mint, and a tangy dairy substitute and voila!

I feel so stupid. Years ago, I read somewhere, that "there is practically nothing in cucumbers" meaning no nutrition at all, and we like them just for their taste. For years I took this as a truth, and was not too keen on having a cucumber salad.

Well, I didn't check the info so it could be wrong. I just love cukes so much that I don't even care, I'll eat them anyhow. The kids love them too. wish I could plant some year, might see if there's a space out there in the yard...

Well, you'd have to eat a lot of them, about 7 lbs worth to get a day's worth of most things. B3, E, Selenium, Calcium, and zinc wouldn't make it to a day's worth. But it would provide a lot of everything else for only about 400 usable calories.

You could do a lot worse with your raw choices. But not much better.

I think to consume big quantities like this, one would have to drink them.

they are wonderful for bulking up juices much like celery.

so cooling and soothing also. But yeah you'd need an awful lot to get adequate nutrition from them but nothing stopping adding some in daily, variety is the spice of lifesmiling smiley.
