Why old veggies taste bitter?

I blend multiple raw vegetables and salad dressing in a high powered blender that turns it into a smoothie. I keep it in the fridge. But it begins to taste bitter after a couple of days. Why? I am looking for scientific explanations.
Is it safe to eat it with bitterness? If not, why not?
I heard that eating bitter food is good for health.
Even some whole fresh vegetables begin to taste bitter after a few days. Why?

Bitter is your body sign that the food should not be eaten. Listen to your senses.

Oxidation. Greens oxidize quite quickly, fruits less quickly. Once the cell walls of a plant are ruptured, as through blending, this exposes the nutrients to the air and starts their denaturization. I don't generally consume juiced/blended things more than a few hours old, and have been refrigerated. Some things that are naturally bitter, such as apricot kernels due to cancer fighting amygdalin or broccoli due to cancer fighting sulforaphane, can be very beneficial. But food that becomes bitter through processing or aging has the opposite affect. Hope that helps.
