First, this is one you want raw. Most cruciferous vegetables lose their effectiveness when cooked, esp if/when the water they are boiled or steamed in is not retained as vegetable stock.
For me watercress might be the most challenging as it has the strongest most pungent odor of all cruciferous vegetables when juiced and even in whole food form. But it is exactly the strong smell that is a good indicator of it's nutrient benefits. And why John Kohler and others always recommend no more than 1/4 of green being cruciferous with the other three quarters being milder flavored greens such as romaine lettuce, spinach, cucumber, celery, etc. Paul Re: Anti-cancer properties of watercress

Date: October 08, 2010 07:26PM Watercress is a great vegetable good link also, my only problem is that watercress is a haven for parasites so it must be washed very thoroughly or grow your own. Sorry, only registered users may post in this forum.
