how do you know if kombu has been steam processed?

Date: November 24, 2010 12:05PM I have two kinds of kombu. Or rather two brand names. One is the main sea coast vegetables kelp kombu, and the other is from the eden organics kombu. The Eden organics is tough and hard in it's dry state while the maine sea coast brand is a lot softer dry.
What's the difference between the two? The Eden organics ones are about the same as the japanese brand ones I've found in chinese markets... although the japanese ones have more of a metallic taste to them. Does the toughness confirm that it's been steam processed? Sorry, only registered users may post in this forum.
