sprouted beans - new to raw diets

Hi there! Over the last three years, I have been slowly improving my diet and I have finally arrived at this new stage - going raw. I have significantly reduced my dairy intake, been eating mostly veggies, and juicing raw veggies for about 6 months now, and I am proud to say that I have been more diligent than not. However, some of my favorite "bulk, stick to yer bones" foods are beans.

My favorites are garbanzo beans, black beans, red beans (whole or refried), and I'm not sure how I am going to get along without them in the slightly mushy, slighty crispy (cooked) state I am accustomed to. I need HELP!

I don't know anything about sprouting the above beans, or if there is a way to make raw food refried beans. Would someone oblige me with a resource or two?

I would recommend making a clean break. Stop eating all cooked foods. Steer your grocery cart in the direction you want to go.

Hi

As a start, here's how to sprout garbanzos (which we in the UK call chick peas).

Find a wide-mouthed jar (like the jar used for large pickled dill cucumbers - which of course you wouldn't eat :-))

Put one half-cup of chick peas in the jar.

Fill two-thirds full with water.

Cover the lid with a bit of netting (secured with a rubber band).

Leave to soak for 24 hours.

Next day drain and rinse, and prop the jar downwards, but at 45 degree angle, resting it in a dish so stays in position.

Leave in a cool room for 2-3 days, rinsing through halfway through each day.

Then, voila! Sprouted chick peas. They'll taste very different from cooked ones, and you may well find them a bit weird to begin with - you may even dislike them. But, once your palate starts to accustom itself to the taste of the pure rather than the damaged, they will start to improve in flavour and even taste sweet!

Then use them in salads, eg mix with spinach, tomatoes etc to make a Mediterranean-style salad.

PS Never sprout red kidney beans. They're toxic raw (which in my opinion tells us that we shouldn't be eating them at all).

I like to make raw hummus with garbanzos, and I sprout a blend of mung, adzuki and lentil beans for raw soups, tacos, and whatever I want to throw them in.

another raw question added on: ive begun to sprout mung, and the sprouts all turned pinkish. does this mean they went bad?

Bad is when you see grey/black, smell a foul odor, and the sprouts start sticking to eachother in a gluey kind of way because they are decomposing. It's more likely to happen when the relative humidity and temperature are high.

I can sprout only in the winter, when it's comparatively dry.
