Yes, of course. We used to eat it dipped in sugar because it is so incredibly tart though, not sure how to make it tasty. Maybe chopped with some raisins and fruit juice as a fresh summer salad. And please remember that the leaves are HIGHLY toxic and not to be eaten, not even as an experiment winking smiley.

Rhubarb is perfectly edible raw. I just tried googling a link to post here but there are literally thousands of tips and recipes for eating it raw. Go have a peek.
