jj,

A good way of casually figuring whether you are getting enough calories is to assess whether you have good energy levels day to day. A more precise method, as well as one to determine whether you are hitting your macro and micro nutrient targets with your intake, is to type in your day's menu over several days into an online nutrition calculator, like FitDay or Nutridiary. Some of us take supplements, like B12, but if your last health review showed no deficiencies, this may not be necessary for you or at this time. Just keep track of what you are eating, vary it so that you don't sink into a nutrition "rut," and remember to drink water if not feeling hydrated. And keep increasing your raw veg and fruit consumption as you go. Good luck!
