I hear it's a big hit, too! I have always wondered why this hasn't been tried in a multitude of places in the country, not just at the college level. In my area it would do so well. I have often thought about getting backing to create a little vegan cafe with raw and some cooked breakfast/lunches. Re: TX College Cafeteria Goes Vegan!

But note the knee jerk meatist response in the comments, and the tut-tuting from clinicians to end the article--as if to imply that possible slight iron deficiency is equivalent somehow to death from a stroke from the "normal" fare at The Big Texan[rolls eyes]. I think the article was pretty realistic with its criticism that veganism doesn't always equal healthy. Twinkies and diet coke? Those are potentially vegan items if someone is just thinking no meat and dairy. The article said something about avoiding animal fats, which equals healthy to a lot of people. Not everyone eating there are vegan, but just want to eat healthier. I would like to see what was on the menu and see if its really healthier. Whats on the official menu may not give a complete picture of everything. The regular soda machines might be available as implied by the article. My partner was commenting on soda consumption in the U.S. this morning. I was astounded. I am so glad I stopped that habit, but he said that 50% of Americans consume some soda every day. Here is an article about soda. [www.onecanofsoda.com] Well, in any case I hope it has a decent salad and fruit bar. I remember in college that those were just the worst ever. I remember some students prefering to go without, because of the brown wilted lettuce, tasteless tomatoes etc... Re: TX College Cafeteria Goes Vegan!
