Eggplant

what's good about it???? Do you eat it??? How do you eat it??? any great recipes out there using it??? My neighbor just game me several from his garden and was wondering if there was any god or bad qualities of it raw... or cooked even... and how i should use it.

I only eat eggplant cooked; many Mediterranean recipes out there. I've tried eggplant sliced thinly, marinated a bit, and then dehydrated in the Excalibur until crisp, but though it was tasty, I didn't tolerate it well(sometimes I'm OK with raw nightshades, sometimes not).

Have you done a search at the Recipes forum, luvyuu?

I like to chop it up and then mash it in a suribachi. The peels don't mash up, but that's OK. It's very quick. Then I add it (peels and all) to a salad or nori roll. I like it.
