Why does this happen? layering in smoothies

whats the reason that sometimes when I make a smoothy half of the mix will settle on the bottom as a thick soup and the top half will be like juice? Ive always thought it was down to lack of water but I put tonnes in today and it happened. My new theory is that too many nuts/seeds will make this happen, as I put plenty in today.

I noticed this recently myself and my smoothie wasn't nut or seed rich. I had left an extra cup on the unit and when i came to pour it out a few hours later half the glass was green and other pink at the top.

Pretty cool, must be something to do with the fiber settling.

Any ideas as to what the deciding factor is? (ie too much water/ too much fat) for the settling? I used the same ingredients I use for most smoothies and never have this problem so in what way is it the fibre?
I say problem cos this settling effect ruins smoothies for me, it really puts me off.. makes it look like sewerage lol.

Wander,

It cannot really be avoided unless you omit the fiber, which cannot be done. Why not just shake the mixture up to rehomogenize it? That's what I do.

I would guess you're not using a 'strong' Blender like the Vitamix, Blendtec, or Waring. These blenders fracture the Cell Walls, called Micronization, and produce a Homogenized mixture......WY

yeah my blender is pretty weak, still I am curious about the inconsistency as I pretty much used the same ingredients, hmm nvm.

I find if a smoothie sits for a while, it will separate.

On another note, I have tried FOREVER to get juices to layer on PURPOSE just to make them LOOK PRETTY... but never figured it out. Like a B-50-juice. grinning smiley

Agave syrup seems to help homogenize a little bit. I guess it's just cause the solids are heavier and sink to the bottom. What's B-50 juice?

Haha, sorry, it was a bad play on words. B52s are (no, thanks!) alcoholic shooters that layer. I don't drink, but love the aesthetic presentation of food, so I was thinking, a, um, well, B...50-juice would look really neat to serve someone, like a superfood elixir shot. tongue sticking out smiley

No new interesting nutrients, sorry to disappoint. ^.^;;

I don't know. raw cocoa puddings are so good plain, I'd hate to ruin them. What would make a good raw parfait? maybe with some kind of coconut layer and a nice light fruit. Ooh star fruit and a watery coconut layer. How would you do that?

I would do a mango puree layered over kiwi fruit puree. Coconut and star fruit would look pretty, but I don't know how they'd taste together. Maybe do a search in the Recipes forum to get more ideas? smiling smiley

Negligible. As stated the ingredients didnt change from previous times where the smoothy didnt seperate. 100% sure it was the seeds though.

Well, my nut/seed smoothies come out great and creamy. (I use a Magic Bullet.) I mean, it is a little weird to have to chew your smoothie, but the price we pay for good health.
