Date: January 27, 2012 05:50PM My partner makes rosehip wine. He has discovered that the small wild hips make a far better wine - the big fat garden rosehips from the likes of Rosa rugosa are far too pithy and don't seem to make good wine at all.
This may translate into how they are too eat as well - i would say trial and error will let you know - but yes they are quite safe too eat although probably not terribly palatable. Re: Are Rosehips safe (and healthy)?
