Anybody eat sweet potatoes here? and if so, how do you prepare them? Maybe dehydrate them and eat as chips?

I wouldn't recommend dehydrated potatoes of any variety. For me, both taste and texture go beyond awful.

Yeah eat them raw, whoo hoo, there great. Like I always say if you get good ones theya re awesome raw! if they are not really good raw just cook them up and enjoy.

I like to cut them into thin julienne strips and eat them as is; they are generally pleasantly floral tasting and slightly sweet. I also cook them, obviously.

If you cut a sweet potato and leave it raw but don't eat the whole thing, you can preserve what's left by keeping it in the fridge while submerged in water. I think it will last a few days maybe even a week.

Yeah, sweet potatoes are OK. Just remember that if you start to feel joint problems (like on the knee, shoulder, etc), consider stoping the sweet potatoes for like three days and the pain will go away. They are very high on oxalates (form crystals).

Interesting. Thanks.. I have been having some joint problems and I thought a sweet potato would help but obviously, it was the wrong carb! I need to find some healthy carbs... but nothing too much sugar. I workout alot as you know and I am not sure if I injured myself with too little carbs. Honestly, if I could just eat vegetables and some plant protein, I would be happy. Is low carb ok? Like under 50 grams per day?

Sweet potatoes aren't that high in oxalates, not as compared to leafy greens, for example. I hold that these foods, because they are also very nutritious, are not the things to eliminate in the case of joint problems. Rather, the stuff that actually causes general unwellness is what should be eliminated: animal products, and possibly grains, depending on one's tolerance.

THanks. I do not tolerate grains at all, and havent eaten any in a really long time.
