Hachiya versus Fuyu

persimmons, that is...

I normally would find the hachiyas, which have to be perfectly ripe in order to consume or else you get that horrible cotton mouth.

The last two times I have bought fuyus since that is all there is. Fuyus can be eaten at different stages, which makes them more convenient. But I have discovered another difference between them and hachiyas: they seem to have a tougher skin. So when I eat them, they are a bit rough in that aspect. I used to think you couldn't eat them as is and had to peel them and am glad to discover that is not true. With hachiyas, it gets kind of messy trying to peel them when they are so delectably mushy inside...

You can let the fuyus get soft like the ripe hachiyas, and then their skin is just as soft as a hachiya skin. I like my fuyus when they first start to get juicy, that is, if you take a bite, some drops of juice start dripping from the flesh.
