Raw green beans, less is more

Tender raw green beans are delicious with lemon or lime. Because they are chewey compared to the cooked kind, i find that if i eat them in small amounts, they can be a regular part of my diet.

The raw vegan Thai green papaya salad famously contains raw green beans and i like mixing this salad into a pound or two of chopped romaine hearts with extra peanut butter. Peanut butter can be raw if you make it yourself.

But you can have a have a small plate of green beans chopped up by themselves with lemon and a little seasoning and they are delectable.

Great idea.

For us in colder areas we cannot get these fresh products.

I used to eat frozen green peas and frozen cut okra.

Convenient and nutritious but then my indoor micro greens especially the green peas micro greens started to complain that they were not getting the attention.

Green peas micro greens: We are fresh and nutritious why are you wasting time on frozen peas?

Frozen Peas: We are convenient and nutritious too

Green peas micro greens: Frozen food is evil.
