This recipe seems very similar to Rod Rotundi from Leaf Cuisine. That was a signature dish he served at his now closed raw restaurant. Not the mango salsa, just the falafel recipe. He studied with the Bedouin people and how they made falafel in the desert sun to dry outside. Re: Nice Thanksgiving Recipe

That's neat that you tried these 
I'm thinking that if they are flattened like a patty then it would be easier to dry them out in the sun. Also, if they were thinner patty wise and maybe smaller volume wise then... why not? Put them out on a brick ( well, at least during the summer) and enjoy sun dried falafel patties Sorry, only registered users may post in this forum.
