Amaranth greens -- good to eat?

Date: August 15, 2006 08:08PM I made a whole bunch of amaranth greens juice and it's definitely making my heart pound, so I don't recommend it. Must be the oxalic acid or other elements. Also gave me a headache! Re: Amaranth greens -- good to eat?

OK - I looked it up in my seed catalogue. They say that the type of amaranth green called Calaloo (I believe this is a common food in the Caribbean countries) can be eaten in a salad, i.e., raw. Maybe some of you were trying to eat the young greens of the grain-type amaranth? I tried that years ago, and it was awful. Sorry, only registered users may post in this forum.
