Tools for shredding the inside of a mature coconut?

Hi,

I was writing because I am trying to find more effective methods for preparing mature coconuts. I am good on the enite opening process, what i really need is a culinary or even hardware tool that would be best for carving and shredding out the hard meat on the inside once the coco was opened. The "problem" that I encounter is that very thin brown layer between the meat and the the shell that stays stuck to the meat once it's removed.

any help would be great.

I use a strong spoon for leavering the meat out, then a potato peeler to remove the brown skin still stuck to the meat.

I have found that eating that thin brown skin poses no problems. It's barely noticeable to me, anyway.
