Date: October 14, 2006 06:34AM You don't have to cook tomatoes to increase lypocene absorbtion, blending them has the same effect (of course that isn't as profitable because tomato puree isn't very marketable).
Also, as the study noted lycopene is fat-soluble, so adding some fat to a dish with tomatos also enhances its absorption. The same goes for salads in general (eating fat with a salad increases absorbtion of lycopene as well as Vitamin E and other fat soluble nutrients). Date: October 14, 2006 11:30AM I always eat tomatos with olive oil, vinagre, salt and pepper (my standard salad dressing). Does the olive oil count as a fat type substance? Sorry, only registered users may post in this forum.
