Date: July 24, 2012 04:48PM An RDA or MDR is usually based on preventing a deficiency anyway, not preventing overdose. There may be Upper Tolerance Limits, but I seriously doubt that this is an issue with arugula.
Some have raised concerned about cruciferous vegetables generally (arugula is a cruciferous vegetable) interfering with thyroid function. But this is usually only a problem if iodine intake is not sufficient. Paul Re: Arugula - scientists say it's better cooked than raw??

[lpi.oregonstate.edu] sounds like if you are on the low side of iodine and taking large quantities of cruciferous, could be a problem. As always, the dose is the poison. thing is, in moderation, cruciferous vegetables along with allium veggies are the best at stopping cancer bar none. It would be a huge mistake to avoid cruciferous veggies if what is needed is an iodine increase.
