Sprouted legumes anyone?

Just wondering who here eats sprouted legumes regularly? How do you like to eat them?

I didn't like legumes at first, but now I love them mixed with salads and nori rolls. My favorite is sprouted black lentils, but I like several others too. They're best when the sprouts are short.

I previously believed there was a protein "myth" and that sufficient calories would always provide sufficient protein. I don't believe that anymore. Legumes are good sources of lysine (an amino acid that can often be insufficient from nuts and seeds), and I think this may be a reason why they contribute to satiety (for me at least).

Lentils (green, regular size, organic) are my favorite. Best size of the tails for me would be 1-2 times the length of the lentil. Mung bean sprouts are very good also but provide less protein. To me eating mung bean sprouts reminds me alot of eating raw corn which i love. Alot of times I will mix lentil sprouts with sunflower seed sprouts. It's too bad that peas are most often sold as "split" otherwise I have them often also. Before I started sprouting I could not stay raw, and lost alot of weight. I always like the debates on this forum as to which is better sprouts vs high fruit.

Close2raw, I think that's pretty cool. I think I will try mixing lentil sprouts with sunflower seed sprouts.

I'll eat mung bean sprouts in a salad. Kind of gives the salad a Chinese food appeal.

Maybe my digestive has not sufficiently recovered but sprouted beans still remain indigestible.
There are many other foods to choose from.
I do sprout mung beans and lentils but just for fermentation and drinking the fermented liquid, everything else for the garbage.

Sorry to hear that CommonSenseRaw.

The silver lining is that if you're composting, there are critters out there who love you! smiling smiley

Does the fermented liquid taste OK?

It taste like rejuvelac. I guess you get used to it.
My diet is very simple, I grow indoor greens and juice them and eat fruits
Sprouted beans and seeds are good for fermenting. It will take me too long to chew them and they do not go down easily. I could be just me.

I do not eat them regularly but every now and then I will make raw sprouted garbanzo bean hummus or sprouted raw lentil salad I learned in Paris. For a potluck or something. THey are good storage food to have for end of days preparation.

I regularly enjoy sprouted green lentils, though I haven't been terribly creative with them. Just toss them on salads or with steamed broccoli.
