Difference between whole and broken nuts

I'm soaking nuts overnight in order to eat them the next day (i'm not sprouting them). To this end, is there any difference between soaking the nuts in their whole or broken form?

They just have to be unpasteurized hopefully you already know.

To answer your question, no. What is of the most importance is that they are as fresh as possible, nuts get rancid. It's best that they are unpasteurized but not absolutely necessary. And even better if they are organic, as always, that is the most important.

I buy almonds from a farmer's market that say "raw unpasteurized" on the label but nowhere does it say if they are organic or not. Considering how hard it is to find raw almonds in the US I suppose I will just have to live with it!

I understand your pain close2raw, I am curious exactly what type of almonds you are getting and where you live, I am always curious about these things. Example: Raw from Spain, raw from the US, etc.
You can get raw organic online from CA. if you like. I do not like the spanish almonds and won't support the sales of them. FYI it is not too bad to get pastuerized organic, they are not cooked all the way through, not even a little. For the most part they are fine for soaking but not optimal of course. I have not had an issue with them as long as they are from a good source and fresh. When they first started doing this I would not even touch them but we learn, try them out. If possible don't support conventional, sometimes this is our ony power as consumers.

I'm aware of the pasteurization and organic issues. My doubt was whether if the processes of digestibility increase took place equally in the whole or broken form (of any nut, no particular one).
Or put it in another way, if the transformations occuring during soaking are locally or globally triggered. It would be kind of weird if it was a global thing, i mean if the seed needed to be whole in other to the changes to take place, but on the other hand this is the case for germination. Anyway my knowledge of seed anatomy is zero.

broken nuts have a lot more surface area where it can be exposed to the air and oxidized and become rancid

the more it is exposed to the air, heat, light etc. and lying around in the bins at the store

the more the freshness ought to be questioned

( all things being equal)

as far as whether or not they will germinate if they are broken up into a zillion pieces

that's a really good question
and i don't know

usually get them whole

okay hope someone else knows genius question by the way
who would have thought of it except this person
maybe a horticulturalist can answer as i think it does make a difference
just thinking about a totally crushed up nut
and a whoel nut
seems like one would germinate and the other would not have a chance
though i don't realy know
anyone really try it to see if they germinated?

that would be the ONLY way to know
for sure

Soaking nuts. I do this with almonds from spain. I would never soak broken nuts. I see what you are saying. They should be in their shells. But some germination or softening at least takes place right?

This is a good statement but the OP is not sprouting, otherwise it all makes sense. Not all can afford whole nuts.
