It's been there at least a week!

I would prefer to just eat it.

Best to keep it there for 2 - 3 days at the longest or else it gets tough and crazy. Many other sprouts can keep longer, but not rye. You don't want to be eating those little grass heads, best to eat the legs instead.

Just for interest, l have managed to keep alfalfa sprouts on the back lawn in a jar for almost a month during the dark winter before it rotted. Kulvinskas has managed 3 weeks.

I have them in the sprouting bag in the fridge. But it's just a matter of their tails getting too tough and not that it goes bad? I will doublecheck but it doesn't seem to be too long. I heard they keep growing even in the fridge. I want to make dehydrated bread with it.

The rye will keep for weeks, but it gets tough and gnarly. I have had some rye sprouts in the fridge for 3 weeks and it is unusable.

Yes, they still grow in the fridge except for the green sprouts that have shed their hulls. Green sprouts can rot, legume sprouts can rot, certain grain sprouts can rot, but rye can go for ages. I have had some sprouts in the fridge forgotten for months.
