the "perfect" kale salad

This kind of thing annoys me.

She uses 4 cups of kale. I like that part.
Also some pomegranate. I also like that part.

Here's the part I don't like:
1 tbsp olive oil
1 tbsp tahini
4 tbsp pumpkin seeds
1/2 avocado

This recipe is 70% fat. It contains 95% of the daily recommendation for fat. In addition the fat is way out of balance, with omega6yawning smileymega3 of 44.5:1. It should be 1:1 to 4:1. She is way out of range by a factor of 11.

But she is very popular. She got a page in the daily mail today. Yeah, it's a rag but a lot of people read it.

Only 1/7 of the calories come from nonfatty fruits and vegetables.

Surely there are better ways to get people to eat kale and pomegranate.

Had that yesterday- just a half avocado and half lemon blended with some raisins maybe.

Lots of people do not get, for every raw recipe you only need one of each of the five tastes...

So not just the fat is 4 x there..but what about the sour, the salty, the sweet, the bitter, the spicy...there should be one of each guys! Rounds out every raw vegan meal to perfection..

Time to update, lol....

" Recent discoveries

The receptors for the basic tastes of bitter, sweet and umami have been identified. They are G protein-coupled receptors.[17] The cells that detect sourness have been identified as a subpopulation that express the protein PKD2L1. The responses are mediated by an influx of protons into the cells but the receptor for sour is still unknown. The receptor for amiloride-sensitive attractive salty taste in mice has been shown to be a sodium channel.[18] There is some evidence for a sixth taste that senses fatty substances.[19]

In 2010, researchers found bitter taste receptors in lung tissue, which cause airways to relax when a bitter substance is encountered. They believe this mechanism is evolutionarily adaptive because it helps clear lung infections, but could also be exploited to treat asthma and chronic obstructive pulmonary disease."

La V,

I think kale goes very well with a salty sesame.

Chop up your kale finely, removing the stems. Smaller leaves
taste better than larger leaves.

Try this for a dressing: sesame seeds, citrus juice, salt, blended, I would do maybe 2 tsp of sesame and the juice of one fruit (lemon, orange, grapefruit, etc.)

Pour it on the kale and if you don't want to massage it in, let it sit there are least 20 minutes.

You can add grated carrot, grated beet, pomegranate, onion or scallion.

But I confess that I have been juicing my kale lately.

Exactly! I like your idea of sweetening things up with the raisins--I have always wondered why people like Freelee always use dates but not raisins. They are way cheaper and very nutritious. But also remember that there are many servings for one salad. So that 70% fat intake is if you ate the whole thing and you don't have to.

My harcore, raw food friends, the rabbits, got into my kale garden but it didn't matter and I learned a lesson or two from them.

Lesson 1 - You don't need to eat the stems.

They strip the stem of the leaves and leave the rest. Of course they do. The stem is primarily cellulose. Who needs it? The cellulose might be beneficial to someone on a low fiber diet who needs to move the gunk out of their colon but those of us living on living foods, we get our daily quota of fiber.

Lesson 2 - You don't need to put dressing on your salad.

That one is a little hard for me to learn. I seldom ever eat a salad without some sort of dressing but I admire the contented simplicity of my fellow herbivores out there in the natural world. My evolution in the world of raw continues but eating my greens au naturel remains an unrealized goal.

The rabbits are my heros in the living food world!

Raw4ever, did you know that rabbits have two forms of stools and that they have to eat the soft ones to live?

Margaret Attwood made this an interesting plot point
when Crake designed his new, improved, fully vegan
humans in "Oryx and Crake."

Lucky for us humans we are not built like rabbits - not to say we can't learn plenty from them.

Your welcome, Raw4ever!

I love watching the wildlife that live in the yard. The rabbits eat pretty much what I do of what's growing from the ground.

My favorite tip I've leaned from watching the rabbits is how they pluck the stems of leaves from the ground at soil level and then always chew them from the very base of the stem up. That's how I learned to always feed my greens into my single auger juicer from the bottom of the stems up. Rabbits are efficient chewers and now so is my juicer.

Thanks SueZ.

I never consciously thought of that before but you're right; that is what they do. I'll try feeding the stems first. That makes perfect sense.

You're welcome, Raw4ever. I think you will be very happy with the rabbit's lesson!
