Wow. I'm with SueZ. It takes no time at all to mash up some avocado with lemon juice (or at least I like lemon juice in my guacamole). Never seen a reason to buy store bought guacamole. It's just too easy to make at home to justify paying 10X more for a chemical laden store bought version.

Even before I went raw, I was of the mindset it was always better to make things at home from scratch because they weren't processed in large scale facilities (theres always some kind of 'process' that depletes nutrients). Cheaper too.

it's not really about avocado.

it's about cold/pressure instead of pasteurization for juices.

I guess my point is, why subject it to this process in the first place? We humans do not have a good track record with "miracle" processes. Too many times something that's been hailed as "perfectly safe" and "a marvel of science" when it first came out has later had unforeseen/unintentional negative side effects come to light as people began including the product regularly in their diet or routines. Why not just make fresh juice or fresh guacamole at home out of the raw fruits and vegetables, especially with how easy it is to do? Why subject these things to an extra and highly unnatural step of being processed with high pressures? Perhaps this process doesn't affect enzymatic activity, but undoubtedly it affects other things we may or may not recognize at this point.

But why add this extra step? Why buy high pressure processed juice instead of some fresh fruit you take home and juice (or juice at home and bring with you)? That's what I don't get. It costs less, it doesn't take *that* much time, it's fresher from home even if you have it in the office fridge for a couple hours, less waste since you'd presumably put justice from home in a reusable bottle...

of course you are correct.

it's just likely better than pasteurization for some people in some situations.

where did i ever say it was better than making your own?

I merely posted it as an interesting new technology that would maybe be better than heat pasteurization, and possibly applied to other things like fruit, although i suppose it might not work for whole fruit.

also for people who are not currently raw foodists. you're looking at it from just a raw foodist perspective.
