shredded coconut

does anyone know if shredded coconut you buy frmo the store is raw?

anyone know much about the difference between shredded, dessicated, and just plain old mature coconuts that you get intact with the shell and all that?

I've seen freeze dried coconut that claims to be raw. It's in a green bag. There's no restrictions on the legal use of raw labeling though, so who really knows.

one difference is that the more it is cut ( shredded), the more the oils are in contact with the air.. and the more of a chance it incurs to get rancid

due to a substantial amount of more surface area being in contact with its environment

so mature intact in shell is best

as far as dessicated... i'm kind of ignorant but my guess is that it has to be dessicated in order to be shredded

like... how would you shred an avocado unless you dessicated it first?
granted.. there is such a thing as a shredded avocado ( i'll invent it.. you can buy it lolsmiling smiley

Not really so with saturated fat. Coconut fat is saturated fat. Shredded coconut desiccates without going rancid. If it's done at a low enough temperature it is considered raw.


DIY shredded coconut tastes the best and is easy to do. If you don't want to dehydrate your freshly shredded coconut you can freeze it for later use.
