"The health benefits of eating dark chocolate have been extolled for centuries, but the exact reason has remained a mystery — until now. Researchers reported here today that certain bacteria in the stomach gobble the chocolate and ferment it into anti-inflammatory compounds that are good for the heart.

Their findings were unveiled at the 247th National Meeting & Exposition of the American Chemical Society (ACS), the world’s largest scientific society. The meeting, attended by thousands of scientists, features more than 10,000 reports on new advances in science and other topics. It is being held at the Dallas Convention Center and area hotels through Thursday."

Is there such thing as a raw chocolate? I understand that all is heated in the process, even when labelled 'raw'. Also, some put forward concerns about the treatment of laborers, children in particular.

The cacao beans I buy are said to be raw and they do have a good deal of purple in them. The dehydrating process darkens many raw foods and with cacao beans they are too dark to see the purple until they are pulverized and diluted in chocolate smoothies - at least that's what I've found.

The only person I've seen debunk the possibility of chocolate being raw based his opinion on the lack of purple which, at best, is very flimsy evidence. If there are any other criteria such rumors are based on I am not aware of them.

Well, raw cocoa beans may be raw, but I am not so sure about various raw chocolate products. I guess one has to dig and do their own checking to find this out.

OK, when I go to the organic shop, I see cocoa beans labelled "raw cocoa beans" and so I refer to them as cocoa beans rather than chocolate. The products that I see labelled "raw chocolate" are the rectangular things, made of ground cocoa beans and other ingredients, and so I learned to use the word chocolate to refer to those.

Is it possible to make your own raw chocolate (ie the rectangular things) from scratch, by using truly raw cocoa beans?

Sure you can make raw tempered chocolate bars, and other chocolates, too, even without a stone grinder if you don't insist on starting with the whole raw beans and go with the raw cacao butter and pre ground raw powders.

There are several raw chefs teaching how to do it. I have Matthew Kenny's raw chocolate book and recipes from Russell James and Amy Levin. You can take it as far as you want to once you learn how to temper chocolate. Here's Amy Levine's site ...

I have not digested all the information. Not much time here. It seems that in order to check whether some product is really raw, one has to do an awful amount of research. I read there that both cocoa and cocoa butter most likely has been heated above 200F and so technically isn't raw.

You're welcome, rawgosia. I read the article. There is nothing inherent in the process, at any stage, that necessitates it being heated more than 108F.


Yes you really do have to do a lot of research if you want to produce raw chocolate bars - but if one hasn't the time for that one certainly hasn't the time to learn proper tempering, etc. so it's a moot point.

There are also good organic raw flavor extractions for those who want to make flavored chocolates. Mind you - this is not a raw vegan inexpensive hobby as even these flavors cost $22 for each little 15 mL bottle.

And so this thread is about the precise reason for the health benefit which is it feeds bacteria in your gut? Hmmm..that does not sound like something we should be celebrating.
