What to do with unripe melon?

It's such a shame when you cut a melon in half only to find it's not really ripe enough. Does anyone have any ideas of what could be done with it, to minimise the health issues caused by consuming unripe fruit? I don't like to just throw it away.

So far my thoughts are to juice or blend it, then add some extra minerals, then ferment it (ie, add some kefir or kombucha).

Anyone have any other bright ideas? x

Things I've tried with some success:

Put melon (or any fruit) back together and let ripen. Taping the seam may help.

Leave apart and let ripen. The outer part of the fruit dries and protects the inner.

Cut up and put in your food dryer for slow drying. It will ripen as it dries.

With persimmons the best way to ripen them is to cut them open when they show some soft spots and let ripen exposed to the air. This develops the best flavor.

Hi Lisa,

I juice unripe melons.
Let's say you cut open a honey dew or cantaloupe and they are not ripe, then just cut off the peel and you can juice through a centrifugal or twin gear. I will combine the melon with a sweet ripe fruit in the juicer, so the juice is a bit sweeter than just the unripe melon alone. I know Esselstyn says to watch out for fruit juice, but I personally feel the amazing effects of antioxidants in seconds-old fresh fruit juice. It depends on the fruit, of course.

I don't think all unripe produce is bad. Papaya is an excellent example of being beneficial in both a ripe and unripe stage. Thai green papaya salad is a signature raw vegan dish that is both healthy and nutritious.

Gosia, all my unused food gets composted, but at £4 (around $6) for a teeny melon, that would be pretty expensive compost lol

Brome - interesting idea - I haven't noticed any ripening of melon before when I've left it, maybe I'll try to leave it a bit longer. The taping idea is a good one!

Tai, yes I have no problem with juicing fruits smiling smiley I like to juice the peel of a watermelon too, as long as it's organic.

Another thing you could try. I do it sometimes. I let sit melons in my kitchen (a week or two) for a while before opening. I think they do soften.
