What is the amount of nitrate in spinach?

Does anyone have a list or so about this ?

I know in 80/10/10 diet we eat lots of spinach, how much is too much, and how does the chemistry of the plant change if I eat it cooked?

Spinach is very high in oxalic acid making its bio availability very low when eaten raw.

You may be better off having it cooked or juicing it and fermenting the juice for few minutes.

80/10/10 says nothing about sprouts and micro greens which may contain less oxalic acid than the mature green.
