I know in 80/10/10 diet we eat lots of spinach, how much is too much, and how does the chemistry of the plant change if I eat it cooked? Re: What is the amount of nitrate in spinach?

Date: July 31, 2017 07:50AM Spinach is very high in oxalic acid making its bio availability very low when eaten raw.
You may be better off having it cooked or juicing it and fermenting the juice for few minutes. [www.nutritics.com] 80/10/10 says nothing about sprouts and micro greens which may contain less oxalic acid than the mature green.
If we are not careful with all of this we may not be healthier on raw food than on cooked when it come to dark greens. Edited 5 time(s). Last edit at 07/31/2017 08:00AM by RawPracticalist. Sorry, only registered users may post in this forum.
