1 eating meat triggers an insulin response

2 The body thinks it is being fed carbs

3 The extra insulin on the blood forces the current blood glucose into the muscles which turns into fat

4 Blood glucose goes down (danger)

5 Adrenalin and cortisol goes up making people agressive

Exactly. Being vegan doesn't make someone peaceful just like not being vegan doesn't make someone aggressive. I've met a lot of very nice people who are not even remotely close to vegan. However, I do think meat does negatively impact one's mind due to the negative karma and energy as well as the potential stress hormones directly inside the meat caused by slaughter/confinement.

Some vegans can suffer from the famous sugar crash (irritability) which is the bottom curve of a sugar spike.

wikipedia recommends drinking cold water with sugar, while hot water has the opposite effect (worse).
