Raw okra

I never liked cooked okra.
I tried raw okra for the first time this summer and I was delighted.
I found out the young tender okra is totally edible raw. The bigger they get, the fiber gets tough and those need to be cooked.
At the Farmers market, they sell both green and red okra and I eat both raw.
It feels really healthy on the teeth to chew it raw which is why I bring the topic up.
I add mine to salad but it's also good just by itself chopped up with lemon and spices.

I add okra to my salads and it makes it taste like gumbo. I like the mucilaginous effect of the okra in the salad. I slice the okra very thinly for my salad.

I know several diabetics that have went the Okra route and they all claim to have blood sugar under control. Before Okra Metformin was the drug they were using, Ive heard it said that Metformin will wipe out immune system over time.
