If someone gave you a bunch of sweet potatoes what would be the way you prepared them for consumption? Thanks

I would grate them (with a salad shooter!) and add a little fresh lemon or lime and/or a little olive oil -- and I might even try some fresh garlic!

They are juiceable, too. Norman Walker mentions this in his book on fresh vegetable juices. I'd add a wee bit of lemon juice to cut the sweetness a bit.

Norman Walker was great and one of the best of raw food pioneers and his writings had a tremendous impact on the raw food movement.

But there are newer scientific findings he was not aware of at his time.

The Okinawan diet was mostly sweet potatoes but it was cooked sweet potatoes.

Another solution is to ferment the raw sweet potato.

Fermentation removes the trypsin inhibitor.

This gives you more choices of some cooked sweet potatoes and some fermented.

Nuts are higher in antinutrients (I think) than any other food that vegetarians like to eat. So, that is why cashews are better eaten that way (fermented), and make a nice cream "cheese"-like spread, though you have to add some lemon jce and salt to make it tastier. I guess maybe I read that here, though I am not sure.

For one person, I would juice them. The fastest way to juice them is with a centrifugal juicer. Then I would stir it into fresh orange juice or stir into a coconut, almond banana milk smoothie. In other words, I would dilute the juice with a seed/coconut milk or orange juice or both. But if you are experiencing insulin resistance, you can make a smoothie with raw vegan protein powder and stir in the juice, which helps stabilize blood sugar.

Centrifugal juicers are very fast for this type of thing and the faster you can juice, the more juice you will drink. The longer it takes to juice, the less juice you will drink is my experience.

If you run the pulp through twice, you can compost the pulp.

My favorite to juice are the garnet yam and purple yam.

It depends on the juicer.

Unlike humans they were not created equal.

The Norwalk Juicer will give the most.

The Green Star Elite more than the Omega.

But these are very potent juices so the quality matters more than the quantity.
