Apples, sweet and non sweet

I just ate Honeycrisp apples for the first time. They are only mildly sweet. Just a tinge of sweetness but close to neutral. They are wonderful. It's almost like eating a raw baby potato but it's a delightful experience.
I've shied away from eating apples because they are so sweet or the green ones are sour.
I've been missing out.

I have bought the sweetest apples like fujis and asian apples in the past and juiced them with tart things like pomegranate and lemon. But those are too sweet to eat alone.

The gerson program uses tart green apples in their juices.

I think of that young man who was cured of epilepsy in 6 months on fruit, eating apples, bananas and oranges. It seems doable if the apples aren't too sweet.
