Why would anyone deny that the Holocaust ever happened when Nazi leaders confessed during their trials?

It's called groupthink.

There is an interesting experiment.
You take a small group of people (5-10) and tell them, that they are taking part in a marketing research study. The point of the study is to show them 5 different types of blue and have them decide, which one they would prefer.
Than you show them 4 types of blue, and one type of red.

Now comes the catch: Only one of the people is actually being tested. The other ones are actors.
And these actors are now arguing in favour of taking the red. They will try to persuade the test person with sentences like: "Lets take this blue (pointing towards the red)".
You would not believe how many people are actually, after an hour of all the people around them saying that red is actually blue, believing it. They will point towards the red and say: "We decided to take this kind of blue, because it is a different blue than the others."
And it is not just that they say it, they actually believe it!

Now back to the Holocaust deniers. Imagine everyone around you saying that the Holocaust didn't happen. That it was a lie manufactured by the allies. That it was a ruse conducted to gain sympathy for the evil Jews so they can continue to rule the world.
The people who are exposed to this over a long time are not only going to believe it, they are going to become so attached to it that it becomes part of their identity. Which means that no matter how much evidence you will present them, they are still going to insist it is part of the conspiracy, because every alternative behaviour would mean giving up their identity.

And this doesn't only go for Holocaust deniers. I had discussions with communists who, no matter how much evidence you presented them about all the people Lenin, Mao and Che Guevara killed, they are still going to claim those are the good guys.
