Low Fat Lunch Ideas

I need some new ideas for lunch. Can you guys give me some good, low fat ideas for lunch? I love salads, but I have yet to find a dressing that I liked that wasn't full of fat. Right now I am eating a bunch of different veggies, wrapped in collard leaves, which is very yummy, but I need a new idea.

Any suggestions?

Thanks a bunch!

For the salad dressing you can use tomatoes, just squeeze the water out of them. Yum!!!

You could also blend them together. You can use any fruits/veggies...celery cucumber etc. Blend or juice them and there's your fat free salad dressing!

4 cups shredded romaine, 1 tomato, 1 shredded carot, 1 stalk of celery, 1 cucumber, 1/2 c lemon juice and 1 small red bell pepper sliced will give you

179 kcal at 8% fat.

Adding 1/2 tsp of olive oil brings you up to 200 kcal and 17% fat.

Adding another 1/2 tsp brings you up to 219 kcal and 25% fat.

If you add to this a few pieces of fruit (apple, banana, orange) you are back down to 15% for fat with the 1 tsp olive oil option or 11% fat with the 1/2 tsp option.

I use about 1 tsp of olive oil per 12 cups of salad.

How about a fruit smoothie? Or just plain fruit? :-)
